Description

Keto Mushrooms Bites are savory, bite-sized snacks made with Baby Bella mushrooms stuffed with a flavorful mix of cream cheese, garlic, herbs, and Parmesan cheese, perfect for those following a ketogenic diet.


Ingredients

24 medium-sized Baby Bella (Cremini) Mushrooms
8 oz Full-Fat Cream Cheese
3 cloves Fresh Garlic
1/2 cup Grated Parmesan Cheese
2 tbsp Fresh Chives
1 tbsp Avocado Oil
1/2 tsp Smoked Paprika
Sea Salt & Black Pepper to taste


Instructions

  1. Clean the mushrooms with a damp paper towel and gently pop out the stems to create a hollow cavity
  2. Finely chop the mushroom stems and sauté them with minced garlic in Avocado Oil until golde
  3. In a mixing bowl, combine cream cheese, sautéed stems, half of the Parmesan, chives, smoked paprika, salt, and pepper
  4. Fill each mushroom cap generously with the mixture and dip the tops in remaining Parmesa
  5. Bake in a preheated oven at 400°F for 15 to 18 minutes until bubbling and golden brow

Notes

Use room temperature cream cheese for better mixing.

Pre-roasting the mushroom caps removes excess moisture.
