Keto Mushrooms Bites are savory, bite-sized snacks made with Baby Bella mushrooms stuffed with a flavorful mix of cream cheese, garlic, herbs, and Parmesan cheese, perfect for those following a ketogenic diet.
Ingredients
24 medium-sized Baby Bella (Cremini) Mushrooms
8 oz Full-Fat Cream Cheese
3 cloves Fresh Garlic
1/2 cup Grated Parmesan Cheese
2 tbsp Fresh Chives
1 tbsp Avocado Oil
1/2 tsp Smoked Paprika
Sea Salt & Black Pepper to taste
Instructions
- Clean the mushrooms with a damp paper towel and gently pop out the stems to create a hollow cavity
- Finely chop the mushroom stems and sauté them with minced garlic in Avocado Oil until golde
- In a mixing bowl, combine cream cheese, sautéed stems, half of the Parmesan, chives, smoked paprika, salt, and pepper
- Fill each mushroom cap generously with the mixture and dip the tops in remaining Parmesa
- Bake in a preheated oven at 400°F for 15 to 18 minutes until bubbling and golden brow
Notes
Use room temperature cream cheese for better mixing.
Pre-roasting the mushroom caps removes excess moisture.
