Ingredients
2 tablespoons Extra Virgin Olive Oil
1 pound Lean Ground Beef or Turkey
1 medium Onion, chopped
3 cloves Garlic, minced
2 stalks Celery, chopped
1 medium Carrot, diced
1 can (14.5 oz) Canned Diced Tomatoes (no sugar added)
4 cups Beef or Chicken Bone Broth
1 tablespoon Italian Seasoning
1 teaspoon Dried Thyme
1 Bay Leaf
Salt, to taste
Freshly Ground Black Pepper, to taste
8 ounces Keto-Friendly Pasta (e.g., konjac noodles)
2 cups Fresh Spinach or Kale
Fresh Parsley, for garnish
Instructions
- Heat Extra Virgin Olive Oil in a large pot over medium-high heat
- Add the ground beef or turkey, breaking it apart as it browns. Drain excess fat
- Reduce heat to medium. Add onion, celery, and carrot. Sauté for 5-7 minutes until softened
- Stir in garlic, Italian seasoning, thyme, salt, and pepper. Cook for 1 minute
- Add canned tomatoes and bone broth. Stir and add bay leaf
- Simmer for 20-30 minutes covered on low heat
- Prepare keto pasta according to package instructions during simmering
- Remove bay leaf. Stir in pasta and spinach/kale, cooking for 2-3 minutes until greens are wilted
- Taste and adjust seasonings. Serve in bowls garnished with parsley
