1/2 cup Grass-Fed Butter or Ghee
2 tbsp Extra Virgin Olive Oil
4 cloves Fresh Garlic
1 tbsp Fresh Rosemary
1 tbsp Fresh Thyme
1 tbsp Fresh Sage
2 tsp Sea Salt
1 tsp Cracked Black Pepper
1 tsp Lemon Zest


Instructions

  1. Remove your turkey breast from the refrigerator about 30 to 45 minutes before cooking
  2. Preheat the oven to 325°F (165°C)
  3. In a bowl, combine butter, olive oil, minced garlic, rosemary, thyme, sage, lemon zest, salt, and pepper to create the herb compound
  4. Loosen the skin from the meat and spread half of the herb mixture under the skin, then rub the remaining over the outside
  5. Place the turkey on a roasting rack in a shallow pan and roast until the internal temperature reaches 165°F (74°C)
  6. Let the turkey rest for at least 15 to 20 minutes before slicing
