Ingredients
14.5 oz Wild-caught Canned Salmo
1 Large Pasture-Raised Egg
1/4 cup Superfine Almond Flour
2 tbsp Fresh Parsley (chopped)
2 Green Onions (thinly sliced)
1 tbsp Dijon Mustard
1 tsp Lemon Zest
2 tbsp Avocado Oil
Sea Salt and Black Pepper to taste
Instructions
- Drain the canned salmon thoroughly and flake it in a large mixing bowl
- Combine all ingredients in the bowl and mix gently until just combined
- Divide the mixture into six portions and shape them into patties
- Refrigerate the patties for 10-15 minutes to help them set
- Heat avocado oil in a skillet and sear the patties for 4-5 minutes per side until golden brow
- Serve warm with a squeeze of fresh lemon juice
Notes
For a low-carb option, use two tablespoons of coconut flour instead of almond flour.
Consider adding red pepper flakes for heat or use a flax egg as a binder instead of an egg.
