Ingredients

2 tbsp Avocado Oil
2 medium Bell Peppers
1 large Zucchini
1 tbsp Fresh Ginger
3 large Garlic Cloves
1/4 cup Coconut Aminos
1 tsp Red Pepper Flakes
1 tsp Monk Fruit Sweetener
1 tsp Sesame Oil
2 stalks Green Onions


Instructions

  1. Step 1: Whisk together the coconut aminos, monk fruit sweetener, and sesame oil in a small bowl. Set aside
  2. Step 2: Heat 1 tablespoon of avocado oil in a skillet over medium-high heat
  3. Step 3: Add ground beef and cook until browned
  4. Step 4: Remove the beef and set aside, leaving the juices in the pa
  5. Step 5: Add another tablespoon of avocado oil and sauté bell peppers and zucchini until tender
  6. Step 6: Stir in garlic, ginger, and red pepper flakes, cooking for one minute
  7. Step 7: Return the beef to the skillet and pour the sauce over everything
  8. Step 8: Toss together for 2-3 minutes to coat
  9. Step 9: Garnish with green onions before serving

Notes

Adjust the red pepper flakes to control the spice level.

Fresh ginger is recommended over powdered for better flavor.
