Ingredients
2 1/2 cups Super-fine Almond Flour
1/2 cup Grass-Fed Butter (Softened)
1/2 cup Monk Fruit Sweetener (Granulated)
1 unit Large Pasture-Raised Egg
1 teaspoon Vanilla Extract (Pure)
1/2 teaspoon Baking Powder (Aluminum-Free)
1/4 teaspoon Sea Salt
Instructions
- Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper
- In a mixing bowl, combine softened grass-fed butter and monk fruit sweetener and mix until light and fluffy
- Add the pasture-raised egg and vanilla extract to the butter mixture and mix until fully incorporated
- In a separate bowl, whisk together the almond flour, baking powder, and sea salt. Gradually add the dry ingredients to the wet mixture until a thick dough forms
- Scoop about one tablespoon of dough, roll it into a ball, and place on the prepared baking sheet, flattening each ball slightly
- Bake for 10 to 12 minutes, or until edges are lightly golden brown. Cool on the baking sheet for at least 10 minutes before transferring to a wire rack
Notes
Chill the dough in the refrigerator for 20 minutes if it feels too soft to handle.
For a vegan version, replace grass-fed butter with organic coconut oil and the egg with a flaxseed 'egg'.
To store, keep cookies in an airtight glass container for up to three days at room temperature or refrigerate for a week.
