Keto Sugar Free Christmas Cookies that provide a satisfying, buttery texture without compromising health goals during the holiday season.


Ingredients

2 1/2 cups Super-fine Almond Flour
1/2 cup Grass-Fed Butter (Softened)
1/2 cup Monk Fruit Sweetener (Granulated)
1 unit Large Pasture-Raised Egg
1 teaspoon Vanilla Extract (Pure)
1/2 teaspoon Baking Powder (Aluminum-Free)
1/4 teaspoon Sea Salt


Instructions

  1. Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper
  2. In a mixing bowl, combine softened grass-fed butter and monk fruit sweetener and mix until light and fluffy
  3. Add the pasture-raised egg and vanilla extract to the butter mixture and mix until fully incorporated
  4. In a separate bowl, whisk together the almond flour, baking powder, and sea salt. Gradually add the dry ingredients to the wet mixture until a thick dough forms
  5. Scoop about one tablespoon of dough, roll it into a ball, and place on the prepared baking sheet, flattening each ball slightly
  6. Bake for 10 to 12 minutes, or until edges are lightly golden brown. Cool on the baking sheet for at least 10 minutes before transferring to a wire rack

Notes

Chill the dough in the refrigerator for 20 minutes if it feels too soft to handle.

For a vegan version, replace grass-fed butter with organic coconut oil and the egg with a flaxseed 'egg'.

To store, keep cookies in an airtight glass container for up to three days at room temperature or refrigerate for a week.
