Ingredients
2 cups Roasted Turkey Breast, cubed
2 large Hass Avocado, diced
3 tablespoons Extra Virgin Olive Oil
1 tablespoon Fresh Lemon Juice
1/4 cup Red Onion, finely diced
2 tablespoons Fresh Cilantro or Parsley, chopped
Sea Salt and Black Pepper, to taste
Pinch Monk Fruit Sweetener (Optional)
Instructions
- Cube roasted turkey breast into bite-sized pieces and place in a large mixing bowl
- Dice avocados, drizzle half of the lemon juice over them, and add to the mixing bowl
- Finely mince red onion and chop herbs, then add to the bowl
- In a small jar, combine olive oil, remaining lemon juice, salt, and pepper; shake to emulsify
- Pour the dressing over the salad ingredients and gently fold together without mashing the avocado
- Adjust seasoning as needed before serving
