Ingredients
1 cup Full-Fat Cottage Cheese
2 cups Rolled Oats (Gluten-Free)
1/2 cup Fresh Blueberries
1 tablespoon Organic Lemon Zest
1 tablespoon Fresh Lemon Juice
3 tablespoons Pure Maple Syrup
1 teaspoon Vanilla Extract
2–3 tablespoons Coconut Flour
Instructions
- Blend the Base: Place the cottage cheese, maple syrup, lemon juice, and vanilla extract into a high-speed blender. Blend until the mixture is completely smooth
- Prepare the Dry Mix: In a bowl, combine your rolled oats and the fresh lemon zest
- Combine: Pour the blended cottage cheese mixture over the oats and stir until well mixed
- Add the Flour: Fold in the coconut flour one tablespoon at a time
- The Blueberry Fold: Gently fold in your fresh blueberries
- Roll and Shape: Use a scoop to portion out the dough and roll them into balls

For a vegan version, use a thick almond-based or cashew-based vegan ricotta.
