Description
A vibrant and refreshing Lemon Cod Salad that balances the flaky texture of fresh cod with a medley of crisp vegetables and a zesty lemon dressing.
Ingredients
1.5 pounds Fresh Cod Fillets
2 tablespoons Extra Virgin Olive Oil
2 large Fresh Lemons (juice and zest)
1 teaspoon Honey or Maple Syrup
1 English Cucumber (diced)
1 cup Cherry Tomatoes (halved)
1 Red Onion (thinly sliced)
1/4 cup Fresh Parsley (chopped)
1/4 cup Fresh Dill (chopped)
1 Avocado (sliced)
Sea Salt (to taste)
Cracked Black Pepper (to taste)
Instructions
- Pat the cod fillets dry with a paper towel and season with sea salt and black pepper
- Heat 2 tablespoons of Olive Oil in a skillet over medium-high heat, then sear the cod fillets for about 3-4 minutes per side until opaque
- In a small bowl, whisk together the lemon juice, lemon zest, 3 tablespoons of Olive Oil, and honey until emulsified
- In a large bowl, combine cucumbers, tomatoes, red onions, and fresh herbs. Pour half of the dressing over and toss to coat
- Flake the cooked cod into bite-sized pieces and gently mix with the vegetables and remaining dressing
- Garnish with extra herbs and serve immediately or chill for 30 minutes before serving
Notes
Use wild-caught cod for the best flavor and texture.
Feel free to substitute cod with halibut, tilapia, or sea bass if necessary.
