1.5 lbs Chicken Breast or Thighs
2 tbsp Extra Virgin Olive Oil
3 tbsp Fresh Ginger
4 cloves Fresh Garlic
1 medium Yellow Onio
3 large Carrots
2 stalks Celery Stalks
6 cups Organic Bone Broth
1/4 cup Fresh Lemon Juice
1 tbsp Fresh Lemon Zest
2 cups Lacinato Kale
Sea Salt and Black Pepper to taste
1/4 cup Fresh Parsley


Instructions

  1. Sauté the Aromatics: Heat Extra Virgin Olive Oil in a large heavy-bottomed pot. Add onions, carrots, and celery. Sauté for about 5-7 minutes until onions become translucent
  2. Infuse the Ginger and Garlic: Stir in freshly grated ginger and minced garlic. Sauté for 60 seconds
  3. Poach the Chicken: Pour in organic bone broth and add raw chicken breasts. Bring to a simmer and cook for 15-20 minutes
  4. Shred and Return: Remove chicken, shred it, and return it to the pot
  5. The Citrus Finish: Turn off heat, stir in lemon juice, lemon zest, and chopped kale
  6. Season and Serve: Add sea salt and cracked black pepper. Ladle into bowls and garnish with fresh parsley

Notes

Freshly grated ginger offers a better flavor than pre-minced versions.

Use bone broth for a richer, more substantial soup.
