Description

Low-Calorie Chocolate Fudge Popsicles offer a rich cocoa flavor with a silky texture, providing a guilt-free frozen treat that's perfect for summer.


Ingredients

2 cups Unsweetened Almond Milk
1/2 cup High-Quality Unsweetened Cocoa Powder
1/3 cup Monk Fruit Sweetener
1 teaspoon Pure Vanilla Extract
1/8 teaspoon Pinch of Sea Salt
1 tablespoon Tapioca Starch (optional)


Instructions

  1. In a medium saucepan, whisk together the almond milk, cocoa powder, and monk fruit sweetener over medium-low heat. Do not let it boil
  2. If using tapioca starch, whisk it with cold water to create a slurry and add it to the mixture, whisking for 2 minutes until thickened
  3. Remove from heat and stir in the vanilla extract and sea salt
  4. Allow to cool to room temperature to prevent ice crystals
  5. Pour the mixture into popsicle molds, leaving space for expansio
  6. Insert sticks and freeze for at least 6 hours or overnight
  7. Run molds under warm water to loosen popsicles before serving

Notes

For a creamier texture, blend in half an avocado before freezing.

Wrap frozen popsicles in parchment paper to prevent sticking.
