Ingredients
1.5 cups Skim Milk or Unsweetened Almond Milk
1/3 cup Freshly Squeezed Lemon Juice
1 tablespoon Lemon Zest
1/4 cup Monk Fruit Sweetener or Honey
1 teaspoon Vanilla Extract
Small Pinch Sea Salt
Instructions
- In a mixing bowl, combine your milk choice, lemon juice, lemon zest, sweetener, vanilla extract, and sea salt. Whisk until the sweetener fully dissolves
- Pour the mixture into a Ninja Creami pint container, careful not to exceed the 'Max Fill' line
- Place the lid on and freeze for at least 24 hours
- Remove the pint from the freezer and check the mixture for a 'hump'. Scrape it flat, then insert into the Ninja Creami machine and select the 'Light Ice Cream' or 'Gelato' setting
- If the texture is crumbly, add one tablespoon of milk and run the 'Re-spin' cycle
- Scoop the gelato into bowls and garnish as desired
Notes
Use fresh lemons for the best flavor.
For a vegan version, substitute skim milk with coconut or oat milk.
Let the pint sit out for 5 minutes before re-spinning if the gelato is too firm.
