This Low-Calorie Ninja Creami Lemon Gelato tastes like pure sunshine in a bowl, offering a velvety, zesty and smooth texture that rivals high-end Italian gelato. Made with wholesome ingredients and natural sweeteners, it's a perfect treat for family gatherings or quiet moments on the porch.


Ingredients

1.5 cups Skim Milk or Unsweetened Almond Milk
1/3 cup Freshly Squeezed Lemon Juice
1 tablespoon Lemon Zest
1/4 cup Monk Fruit Sweetener or Honey
1 teaspoon Vanilla Extract
Small Pinch Sea Salt


Instructions

  1. In a mixing bowl, combine your milk choice, lemon juice, lemon zest, sweetener, vanilla extract, and sea salt. Whisk until the sweetener fully dissolves
  2. Pour the mixture into a Ninja Creami pint container, careful not to exceed the 'Max Fill' line
  3. Place the lid on and freeze for at least 24 hours
  4. Remove the pint from the freezer and check the mixture for a 'hump'. Scrape it flat, then insert into the Ninja Creami machine and select the 'Light Ice Cream' or 'Gelato' setting
  5. If the texture is crumbly, add one tablespoon of milk and run the 'Re-spin' cycle
  6. Scoop the gelato into bowls and garnish as desired

Notes

Use fresh lemons for the best flavor.

For a vegan version, substitute skim milk with coconut or oat milk.

Let the pint sit out for 5 minutes before re-spinning if the gelato is too firm.
