Ingredients
2 lbs Bone-in, skin-on Chicken Thighs
2 tbsp Avocado Oil
1/2 cup Tomato Paste
1/4 cup Apple Cider Vinegar
1 tsp Liquid Monk Fruit
1/2 tsp Liquid Smoke
1 tbsp Smoked Paprika
1 tsp Garlic Powder
1 tsp Onion Powder
To taste Sea Salt
To taste Black Pepper
Instructions
- Remove the thighs from the refrigerator 20 minutes before cooking and pat the skin completely dry
- Combine smoked paprika, garlic powder, onion powder, sea salt, and black pepper in a small bowl. Rub avocado oil over the chicken and coat each piece with the spice mixture
- Heat a large oven-safe skillet over medium-high heat. Sear the chicken thighs skin-side down for 5-6 minutes
- While the chicken sears, whisk together tomato paste, apple cider vinegar, monk fruit, and liquid smoke in a bowl
- Flip the chicken thighs, brush a thick layer of BBQ sauce over the top, then transfer the skillet to a preheated oven at 400°F (200°C)
- Bake for 15-20 minutes, or until the internal temperature reaches 165°F. Optionally, broil for 2 minutes for a caramelized finish
- Allow the chicken to rest for 5 minutes before serving
