These Low-Carb Crispy Zucchini Fritters offer a delightful crunch on the outside while remaining tender and flavorful on the inside, providing a perfect way to sneak more greens into the day. Kid-friendly and nutritious, they are quick to make and ideal for busy weeknights.
Ingredients
2 medium Fresh Zucchini
2 units Large Eggs
1/2 cup Almond Flour
1/4 cup Grated Parmesan Cheese
2 cloves Fresh Garlic, minced
2 stalks Green Onions, finely sliced
2–3 tablespoons Avocado Oil
Sea Salt and Black Pepper to taste
Instructions
- Grate the zucchini and sprinkle with sea salt. Let it sit for 10 minutes to draw out moisture
- Squeeze the zucchini using a towel to remove excess liquid
- In a bowl, whisk the eggs, then add the drained zucchini, almond flour, parmesan cheese, garlic, green onions, salt, and pepper. Mix well
- Heat avocado oil in a skillet over medium-high heat
- Form the mixture into fritters and cook in the skillet for 3-4 minutes on each side until golden brow
- Transfer the cooked fritters to a paper towel-lined plate to drain extra oil and serve hot
Notes
Make sure to squeeze out as much liquid as possible from the zucchini for crispy fritters.
Keep finished fritters warm in a low oven while cooking the remaining batches.
