These Low-Sugar Applesauce Oatmeal Cookies offer a chewy, soft texture and a natural sweetness that everyone in my house simply adores. Their wholesome sweetness comes from natural fruit sugars and a hint of maple syrup instead of refined white sugar, making them a perfect wholesome snack for the busy school week ahead.
Ingredients
2 cups Old-Fashioned Rolled Oats
1.5 cups Whole Wheat Flour or Almond Flour
1 cup Unsweetened Applesauce
1/3 cup Pure Maple Syrup
1/4 cup Melted Coconut Oil
1 Large Egg
1 teaspoon Ground Cinnamo
1/2 teaspoon Baking Soda
1 teaspoon Vanilla Extract
1/4 teaspoon Sea Salt
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper
- In a large bowl, whisk together unsweetened applesauce, pure maple syrup, melted coconut oil, egg, and vanilla extract
- In another bowl, stir together rolled oats, flour, ground cinnamon, baking soda, and sea salt
- Gradually add dry ingredients into the wet mixture and fold until no flour streaks remai
- Optionally chill the dough in the refrigerator for 10 minutes
- Scoop portions onto the prepared baking sheets and flatten slightly
- Bake cookies for 10 to 12 minutes until edges are golden and centers are soft
- Cool on the baking sheet for 5 minutes before transferring to a wire rack
Notes
Use unsweetened applesauce to avoid adding hidden sugars.
If the dough is too wet, add an extra tablespoon of oats.
For a vegan version, substitute the egg with a flax or chia egg.
