Ingredients
½ cup Extra Virgin Olive Oil
¼ cup Fresh Lemon Juice
1 tablespoon Dijon Mustard
1 clove Garlic, minced
1 teaspoon Dried Oregano
Salt, to taste
Black Pepper, to taste
1 teaspoon Pure Maple Syrup or Honey (optional)
1 cup Small Pasta, cooked and cooled
1 (5-ounce) can Tuna, drained
½ cup Cherry Tomatoes, halved
½ cup Cucumber, finely diced
¼ cup Red Onion, thinly sliced or finely diced
¼ cup Bell Pepper, finely diced
¼ cup Kalamata Olives, pitted and halved
2 tablespoons Fresh Parsley, chopped
2 tablespoons Fresh Dill, chopped
¼ cup Feta Cheese, crumbled
1 Large Mason Jar (32 oz)
Instructions
- In a small bowl, whisk together Olive Oil, Lemon Juice, Dijon Mustard, minced Garlic, Dried Oregano, Maple Syrup, Salt, and Pepper until emulsified
- Pour the dressing into the bottom of the Mason Jar
- Layer the diced Cucumber, Bell Pepper, and Cherry Tomatoes on top of the dressing
- Add the drained Tuna, followed by Red Onion and Kalamata Olives
- Gently add the cooked and cooled Pasta
- Top with Fresh Parsley, Dill, and crumbled Feta Cheese
- Secure the lid and chill in the refrigerator for at least 30 minutes before serving. Shake well before eating
