Description

Ingredients

½ cup Extra Virgin Olive Oil
¼ cup Fresh Lemon Juice
1 tablespoon Dijon Mustard
1 clove Garlic, minced
1 teaspoon Dried Oregano
Salt, to taste
Black Pepper, to taste
1 teaspoon Pure Maple Syrup or Honey (optional)
1 cup Small Pasta, cooked and cooled
1 (5-ounce) can Tuna, drained
½ cup Cherry Tomatoes, halved
½ cup Cucumber, finely diced
¼ cup Red Onion, thinly sliced or finely diced
¼ cup Bell Pepper, finely diced
¼ cup Kalamata Olives, pitted and halved
2 tablespoons Fresh Parsley, chopped
2 tablespoons Fresh Dill, chopped
¼ cup Feta Cheese, crumbled
1 Large Mason Jar (32 oz)


Instructions

  1. In a small bowl, whisk together Olive Oil, Lemon Juice, Dijon Mustard, minced Garlic, Dried Oregano, Maple Syrup, Salt, and Pepper until emulsified
  2. Pour the dressing into the bottom of the Mason Jar
  3. Layer the diced Cucumber, Bell Pepper, and Cherry Tomatoes on top of the dressing
  4. Add the drained Tuna, followed by Red Onion and Kalamata Olives
  5. Gently add the cooked and cooled Pasta
  6. Top with Fresh Parsley, Dill, and crumbled Feta Cheese
  7. Secure the lid and chill in the refrigerator for at least 30 minutes before serving. Shake well before eating

Notes

Make sure to cool pasta completely before adding to the jar to prevent sogginess.

Use a wide-mouth Mason Jar for easier layering and serving.
