Ingredients
2 Large Red Bell Peppers
1 Large Yellow Bell Pepper
1 Large Orange Bell Pepper
1 Medium Red Onio
4 Cloves Fresh Garlic
3 Tablespoons Extra Virgin Olive Oil
1 Teaspoon Dried Oregano
1/2 Cup Kalamata Olives
1/3 Cup Feta Cheese
1 Tablespoon Fresh Lemon Juice
Sea Salt to taste
Black Pepper to taste
Instructions
- Slice the red, yellow, and orange peppers into uniform strips and slice the red onion into thin wedges
- Heat a large skillet or wok over medium-high heat and add two tablespoons of olive oil until shimmering
- Add onions and bell peppers to the hot pan and sauté for 5 to 7 minutes until slightly charred yet crisp-tender
- Push vegetables to the sides and add remaining tablespoon of oil, minced garlic, and oregano. Cook for 30 to 60 seconds until fragrant
- Stir in the sliced Kalamata olives, remove from heat, and squeeze fresh lemon juice over the stir fry. Season with sea salt and black pepper
- Transfer to a serving platter and top with crumbled feta cheese
Notes
For a dairy-free version, omit feta or use toasted pine nuts.
For added heat, include dried red chili flakes while sautéing.
