Ingredients
1.5 lbs Chicken Thighs (boneless, skinless)
3 tbsp Extra Virgin Olive Oil
2 tbsp Fresh Lemon Juice
4 cloves Minced Garlic
1 tsp Dried Oregano
1 tsp Dried Thyme
1 tsp Raw Honey
1 cup Full-Fat Greek Yogurt
1/2 cup English Cucumber (grated and squeezed)
1/2 cup Crumbled Feta Cheese
2 tbsp Fresh Dill (chopped)
4–6 pieces Whole Grain or Gluten-Free Pitas
1 cup Cherry Tomatoes (sliced)
1 cup Red Onions (sliced)
Instructions
- Marinate the Chicken: In a large glass bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, honey, salt, and pepper. Slice the chicken into thin strips and toss them into the marinade. Let marinate for at least 30 minutes in the refrigerator
- Prepare the Feta Tzatziki: Grate the cucumber and squeeze out excess moisture. In a medium bowl, fold together the Greek yogurt, squeezed cucumber, crumbled feta, chopped dill, and a splash of lemon juice. Chill until ready to serve
- Sear the Chicken: Heat a skillet over medium-high heat with olive oil. Add the chicken strips and sear for 5-6 minutes per side until cooked through and golden brow
- Warm the Pitas: Lightly toast pitas in a pan or over an open flame until soft and pliable
- Assemble: Spread tzatziki on each pita, layer with chicken, and top with sliced cherry tomatoes and red onions. Garnish with lemon juice
Notes
For a plant-based option, replace chicken with firm tofu or chickpeas.
Ensure to squeeze out the cucumber well for thick tzatziki.
