Description

The Mediterranean Quinoa Bowl serves as the ultimate solution for anyone who values time but refuses to compromise on nutrition. This dish combines hearty protein-rich grains with crisp vegetables, tangy feta, and a bright citrus dressing that wakes up your palate.


Ingredients

1 cup Quinoa
1 can Chickpeas (15 oz)
1 large English Cucumber (diced)
1 pint Cherry Tomatoes (halved)
1/4 cup Red Onion (finely minced)
1/2 cup Kalamata Olives (pitted)
1/2 cup Feta Cheese (crumbled)
1/4 cup Extra Virgin Olive Oil
2 tablespoons Fresh Lemon Juice
1 teaspoon Dried Oregano
1 teaspoon Honey or Maple Syrup (optional)


Instructions

  1. Rinse quinoa under cold water and cook with 2 cups of water in a pot. Bring to a boil, then cover and simmer for 15 minutes
  2. While quinoa cooks, dice cucumbers, halve cherry tomatoes, and finely mince red onio
  3. In a small jar or bowl, whisk together olive oil, lemon juice, oregano, and honey
  4. In a large mixing bowl, combine cooled quinoa, chickpeas, cucumbers, tomatoes, red onions, and olives. Toss with dressing
  5. Gently fold in feta cheese and season with salt and pepper
  6. Serve immediately or store in controlled portions

Notes

Rinse quinoa to avoid bitterness and enhance flavor with vegetable broth.
