Ingredients
1 tablespoon Extra Virgin Olive Oil
1 medium Yellow Onion, finely chopped
2 cloves Garlic, minced
10 ounces Fresh Spinach, roughly chopped
12 large Eggs, organic and free-range
½ cup Unsweetened Almond Milk
½ cup Crumbled Feta Cheese
¼ cup Fresh Parsley, chopped
2 tablespoons Fresh Dill, chopped
½ teaspoon Sea Salt
¼ teaspoon Black Pepper, freshly ground
¼ cup Chopped Sun-Dried Tomatoes (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with olive oil
- Sauté the chopped onion in olive oil until translucent, about 5-7 minutes
- Add minced garlic and sauté for another minute. Then add fresh spinach, stirring until wilted
- Whisk together eggs, almond milk, salt, and pepper in a large bowl
- Combine sautéed spinach and onion with the egg mixture, adding feta, parsley, dill, and sun-dried tomatoes
- Pour the mixture into the baking dish and bake for 30-35 minutes until golden brown and set
