Ingredients
1/2 cup Unsweetened Applesauce
1/4 cup Melted Coconut Oil
1/2 cup Honey or Grade A Maple Syrup
1 Large Egg
1 teaspoon Vanilla Extract
1 1/2 cups White Whole Wheat Flour
1 teaspoon Baking Soda
1 teaspoon Ground Cinnamo
1/4 teaspoon Ground Nutmeg
1/2 teaspoon Sea Salt
1/2 cup Rolled Oats
Instructions
- Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper
- In a large mixing bowl, whisk together the unsweetened applesauce, melted coconut oil, and honey or maple syrup. Add the egg and vanilla extract, whisking until smooth
- In a separate bowl, stir together the flour, baking soda, cinnamon, nutmeg, and sea salt
- Gradually fold the dry ingredients into the wet ingredients using a spatula, being careful not to overmix
- Gently fold in the rolled oats
- Drop rounded mounds of dough onto the baking sheets, spacing them about two inches apart
- Bake for 10 to 12 minutes or until edges are lightly golden. Let cool for five minutes before transferring to a wire rack
Notes
For a vegan version, replace the egg with a flax egg (1 tablespoon flaxseed meal mixed with 3 tablespoons water).
Store cookies in an airtight container for up to 2 days on the counter or up to a week in the fridge.
