Description

A vibrant and comforting One-Pot Chicken Stew made with tender chicken pieces and a variety of fresh vegetables, simmered in a rich broth for an unforgettable meal.


Ingredients

2 tablespoons Extra Virgin Olive Oil
1.5 lbs Boneless, Skinless Chicken Thighs or Breasts, cut into 1-inch cubes
1 large Yellow Onion, diced
3 cloves Garlic, minced
3 Carrots, peeled and sliced into ½-inch thick rounds
2 Celery Stalks, sliced into ½-inch thick pieces
2 large Russet Potatoes or Sweet Potatoes, peeled and cut into 1-inch cubes
1 Red Bell Pepper, cored, seeded, and chopped
4 cups Low-Sodium Chicken Broth
1 (14.5 ounce) can Diced Tomatoes, undrained
1 teaspoon Dried Thyme
½ teaspoon Dried Rosemary
1 Bay Leaf
½ teaspoon Sea Salt
¼ teaspoon Black Pepper
½ cup Fresh Spinach or Kale, roughly chopped
2 tablespoons Fresh Parsley, chopped, for garnish


Instructions

  1. Heat the extra virgin olive oil in a large pot over medium-high heat. Add the cubed chicken in a single layer and sear until golden brown, then remove and set aside
  2. Reduce heat to medium, add the diced onion and sliced celery, sauté for 5-7 minutes until onions are translucent
  3. Add minced garlic and sliced carrots, cook for an additional 2-3 minutes
  4. Pour in chicken broth and canned tomatoes, add cubed potatoes, red bell pepper, thyme, rosemary, bay leaf, salt, and pepper. Stir well
  5. Bring to a boil, then reduce to low, cover, and simmer for 20-25 minutes until vegetables are tender
  6. Return the chicken to the pot and stir in the spinach or kale, allowing to wilt
  7. Remove the bay leaf, adjust seasonings, and serve garnished with fresh parsley

Notes

For added nutrition, consider adding additional vegetables or beans.

This stew can be made ahead of time and tastes even better the next day.
