Description
One Pot Cod Meatloaf is a light, flaky seafood dish that redefines the traditional meatloaf. With a perfect golden crust, it's made in one pot for easy cleanup and combines fresh cod with aromatics and herbs for an explosive flavor.
Ingredients
1.5 lbs Fresh Cod Fillets
3/4 cup Almond Flour
2 Large Pasture-Raised Eggs
2 Shallots, finely minced
1/2 cup Fresh Parsley & Dill (total)
1 tablespoon Lemon Zest
3 tablespoons Olive Oil
1 tablespoon Dijon Mustard
Sea Salt & Black Pepper, to taste
Instructions
- Pulse the fresh cod in a food processor about 5 to 7 times until you have small, distinct chunks
- In an oven-safe skillet or pot, heat 1 tablespoon of olive oil over medium heat and sauté the minced shallots and garlic until translucent. Let cool slightly
- In a large bowl, combine the pulsed cod, sautéed aromatics, almond flour, whisked eggs, lemon zest, Dijon mustard, and herbs. Season well with salt and pepper
- Shape the mixture into a loaf in the center of the greased skillet
- Sear the loaf on medium-high heat for 2 minutes before transferring the skillet to a preheated oven at 375°F (190°C) for 25-30 minutes
- Let the meatloaf rest for 5-10 minutes before slicing
Notes
Ensure cod is patted dry before processing.
Substitutions for cod can include haddock or halibut.
For extra texture, consider adding finely chopped celery or bell peppers.
