2 cups Frozen Pineapple Chunks
1/4 cup Fresh Mint Leaves
1.5 cups Coconut Water
1 tablespoon Fresh Lime Juice
1 teaspoon Raw Honey or Maple Syrup
1/2 inch Fresh Ginger


Instructions

  1. Pour chilled coconut water and fresh lime juice into the blender
  2. Bruise fresh mint leaves and add them to the blender
  3. Layer in frozen pineapple chunks and grated fresh ginger
  4. Blend on low speed and increase to high for 45-60 seconds until smooth
  5. Taste and add raw honey or maple syrup if needed, then blend for 5 more seconds
  6. Pour into a tall, chilled glass and garnish with a sprig of mint and lime slice
