Ingredients
3 large Yukon Gold Potatoes
1 can (15 oz) Black Beans
3 tablespoons Avocado Oil
1 medium Red Bell Pepper
1/2 medium Red Onio
3 cloves Garlic
1 teaspoon Smoked Paprika
1 teaspoon Ground Cumi
Sea Salt and Black Pepper to taste
Fresh Cilantro and Lime for garnish
Instructions
- Dice the potatoes into uniform cubes and pat them dry
- Heat two tablespoons of avocado oil in a large skillet over medium-high heat and add the potatoes in a single layer
