Ingredients
2 lbs Mushrooms, quartered
3 tablespoons Olive Oil, extra virgi
1 teaspoon Smoked Paprika
1 teaspoon Cumin Powder
1 teaspoon Garlic Powder
1/2 teaspoon Chili Powder
1/2 teaspoon Sea Salt
1/4 teaspoon Black Pepper, freshly ground
12–16 small Corn Tortillas
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper
- Wipe mushrooms clean with a damp cloth and quarter them
- Combine mushrooms with olive oil, smoked paprika, cumin, garlic powder, chili powder, sea salt, and black pepper in a bowl and toss to coat
- Spread mushrooms in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway
- While mushrooms roast, warm corn tortillas in a skillet or microwave
- Assemble tacos by filling tortillas with roasted mushrooms and adding desired toppings
