Ingredients
1 head Cauliflower
2 tablespoons Avocado Oil
1 tablespoon Chili Powder
1 teaspoon Cumi
1/2 teaspoon Smoked Paprika
1 teaspoon Raw Honey
1/2 teaspoon Garlic Powder
Sea Salt & Black Pepper to taste
8–10 small Corn Tortillas
1 whole Fresh Lime
Instructions
- Preheat your oven to 425°F (220°C) and cut the cauliflower into small florets
- In a large mixing bowl, whisk together avocado oil, chili powder, cumin, smoked paprika, garlic powder, and raw honey. Toss the cauliflower florets in the mixture
- Spread the cauliflower on a parchment-lined baking sheet and roast for 20-25 minutes, tossing halfway through
- Warm the corn tortillas in a dry skillet for about 30 seconds per side
- Assemble the tacos with roasted cauliflower and desired toppings. Serve and enjoy!
Notes
Do not overcrowd the baking sheet to ensure proper roasting.
Use dry cauliflower for the oil to adhere better.
