Ingredients
1 lb Ground Pork or Turkey Sausage
8 large Pasture-Raised Eggs
2 cups Sharp Cheddar Cheese, shredded
6 cups Sourdough or Gluten-Free Bread, cubed
2 cups Whole Milk or Unsweetened Almond Milk
1 tablespoon Avocado Oil
2 cups Fresh Spinach, packed
Sea Salt and Black Pepper to taste
1 teaspoon Smoked Paprika
Instructions
- Grease a 9×13 inch baking dish with a light coating of Avocado Oil. Cube the bread and spread evenly in the dish
- Sear the sausage in a skillet over medium-high heat until browned and crumbled. Drain any excess fat
- Sauté fresh spinach in the same skillet until wilted
- In a bowl, whisk together the eggs, milk, salt, pepper, and paprika
- Layer the cooked sausage and spinach over the bread, add half the cheese, then pour the egg mixture over
- Top with the remaining cheese, cover, and refrigerate for at least 30 minutes or overnight
- Preheat the oven to 375°F and bake for 35 to 45 minutes until set and golde
- Let rest for 10 minutes before serving
