Ingredients

2 cans (15-ounces each) Canned Chickpeas
2 large Bell Peppers
1 large Zucchini
1 medium Red Onio
45 Garlic Cloves
34 tablespoons Olive Oil
1 teaspoon Smoked Paprika
1 teaspoon Ground Cumi
½ teaspoon Garlic Powder
½ teaspoon Onion Powder
½ teaspoon Dried Oregano
¾ teaspoon Sea Salt (or to taste)
½ teaspoon Black Pepper (or to taste)
1 tablespoon Maple Syrup or Honey (optional)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
  2. Open and drain the canned chickpeas thoroughly. Rinse them well under cold water and then pat them extremely dry
  3. Chop the bell peppers, zucchini, and red onion into uniform, bite-sized pieces. Mince the garlic cloves finely
  4. In a large mixing bowl, combine the dried chickpeas, chopped bell peppers, zucchini, and red onion. Add minced garlic, olive oil, smoked paprika, ground cumin, garlic powder, onion powder, dried oregano, sea salt, and black pepper. If using, drizzle in the maple syrup or honey
  5. Toss all the ingredients together until every piece is coated in oil and spices
  6. Transfer the mixture onto the prepared baking sheet and spread out in a single layer
  7. Roast in the oven for 25-35 minutes, stirring halfway through. Aim for crispy chickpeas and tender-crisp vegetables
  8. Once done, taste and adjust seasoning if necessary. Serve immediately

Notes

Make sure to dry the chickpeas thoroughly for extra crispiness.

Don't overcrowd the pan to ensure even roasting.

Use two baking sheets if necessary for proper roasting.
