Ingredients
2 cans (15 oz each) Canned Peaches (in juice, drained)
2 tablespoons Pure Maple Syrup or Honey
1 teaspoon Ground Cinnamo
1 teaspoon Vanilla Extract
1.5 cups Oat Flour or Whole Wheat Flour
1/4 cup Monk Fruit Sweetener or Coconut Sugar
1.5 teaspoons Baking Powder
1/4 cup Melted Coconut Oil or Light Olive Oil
1/2 cup Unsweetened Almond Milk
Instructions
- Preheat the oven to 375°F (190°C) and grease an 8×8 inch baking dish
- Drain the canned peaches and reserve about two tablespoons of juice. Toss peaches with reserved juice, maple syrup, vanilla, and cinnamon; spread evenly in the baking dish
- In a separate bowl, combine flour, monk fruit sweetener, and baking powder
- Pour melted coconut oil and almond milk into the dry ingredients and mix until a soft dough forms
- Drop spoonfuls of dough onto the peach mixture
- Bake for 25 to 30 minutes until topping is golden brown and fruit is bubbling
- Let cool for 10 minutes before serving
