2 lbs Grass-Fed Beef Stew Meat
1.5 cups Fresh Cranberries
2 large Granny Smith Apples
2 tbsp Avocado Oil
3 cups Beef Bone Broth
2 tbsp Raw Honey or Maple Syrup
1 medium Yellow Onio
3 large Carrots
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Sea Salt and Black Pepper to taste


Instructions

  1. Heat the Avocado Oil in a large skillet over medium-high heat. Pat the beef dry with paper towels and season generously with salt and pepper. Sear the meat in batches until a dark, caramelized crust forms on all sides
  2. Remove the beef and add the diced onions to the same pan, stirring for 3-4 minutes until they turn translucent
  3. Place the seared beef and sautéed onions into the bottom of your slow cooker. Add the sliced carrots and the beef bone broth. Stir in the Raw Honey
  4. Gently fold in the fresh cranberries and the sprigs of rosemary and thyme
  5. Cover the pot and cook on low for 7 to 8 hours, or on high for 4 to 5 hours
  6. About 45 minutes before completion, add the chopped apples
  7. Remove the herb sprigs, taste and season as needed before serving
