Ingredients
2 lbs Grass-Fed Beef Stew Meat
1.5 cups Fresh Cranberries
2 large Granny Smith Apples
2 tbsp Avocado Oil
3 cups Beef Bone Broth
2 tbsp Raw Honey or Maple Syrup
1 medium Yellow Onio
3 large Carrots
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Sea Salt and Black Pepper to taste
Instructions
- Heat the Avocado Oil in a large skillet over medium-high heat. Pat the beef dry with paper towels and season generously with salt and pepper. Sear the meat in batches until a dark, caramelized crust forms on all sides
- Remove the beef and add the diced onions to the same pan, stirring for 3-4 minutes until they turn translucent
- Place the seared beef and sautéed onions into the bottom of your slow cooker. Add the sliced carrots and the beef bone broth. Stir in the Raw Honey
- Gently fold in the fresh cranberries and the sprigs of rosemary and thyme
- Cover the pot and cook on low for 7 to 8 hours, or on high for 4 to 5 hours
- About 45 minutes before completion, add the chopped apples
- Remove the herb sprigs, taste and season as needed before serving
