Description

A comforting Slow Cooker Turkey Casserole featuring tender turkey, wild rice, and colorful vegetables in a creamy sauce.


Ingredients

1.5 lbs Ground Turkey
1 cup Wild Rice
2 cups Chicken Bone Broth
1 cup Plain Greek Yogurt
2 tbsp Extra Virgin Olive Oil
3 Carrots, diced
2 Stalks Celery, sliced
1 Yellow Onion, finely chopped
2 cups Fresh Spinach
1 tsp Dried Thyme
1 tsp Dried Rosemary
Sea Salt and Black Pepper to taste


Instructions

  1. Heat the Olive Oil in a large skillet over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to softe
  2. Add the ground turkey to the skillet with the vegetables. Break it up with a wooden spoon and cook until it is no longer pink
  3. Transfer the turkey and vegetable mixture into your slow cooker. Add the wild rice, bone broth, dried thyme, rosemary, salt, and pepper. Stir everything together
  4. Cover the slow cooker and cook on Low for 6 to 7 hours or on High for 3 to 4 hours
  5. Once the cooking time is up, turn off the heat and stir in the Greek yogurt and the fresh spinach
  6. Let the casserole sit for about 10 minutes before serving

Notes

Rinse the rice before adding it to prevent gumminess.

Use bone broth instead of plain water for more flavor.
