A comforting Slow Cooker Turkey Casserole featuring tender turkey, wild rice, and colorful vegetables in a creamy sauce.
Ingredients
1.5 lbs Ground Turkey
1 cup Wild Rice
2 cups Chicken Bone Broth
1 cup Plain Greek Yogurt
2 tbsp Extra Virgin Olive Oil
3 Carrots, diced
2 Stalks Celery, sliced
1 Yellow Onion, finely chopped
2 cups Fresh Spinach
1 tsp Dried Thyme
1 tsp Dried Rosemary
Sea Salt and Black Pepper to taste
Instructions
- Heat the Olive Oil in a large skillet over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to softe
- Add the ground turkey to the skillet with the vegetables. Break it up with a wooden spoon and cook until it is no longer pink
- Transfer the turkey and vegetable mixture into your slow cooker. Add the wild rice, bone broth, dried thyme, rosemary, salt, and pepper. Stir everything together
- Cover the slow cooker and cook on Low for 6 to 7 hours or on High for 3 to 4 hours
- Once the cooking time is up, turn off the heat and stir in the Greek yogurt and the fresh spinach
- Let the casserole sit for about 10 minutes before serving
Notes
Rinse the rice before adding it to prevent gumminess.
Use bone broth instead of plain water for more flavor.
