Ingredients
2 lbs Ground Turkey (Lean)
2 tbsp Avocado Oil
1 large Yellow Onion (Diced)
2 large Red and Green Bell Peppers
4 cloves Garlic (Minced)
15 oz Kidney Beans (Rinsed)
15 oz Black Beans (Rinsed)
28 oz Diced Tomatoes (Fire-Roasted)
3 tbsp Tomato Paste
3 tbsp Chili Powder
1 tbsp Ground Cumi
1 tsp Smoked Paprika
1 tsp Dried Oregano
1 tbsp Honey or Maple Syrup
1 cup Beef or Vegetable Broth
Salt and Black Pepper (To taste)
Instructions
- Sear the Ground Turkey in a skillet with Avocado Oil until browned
- Sauté the diced Yellow Onion and Red and Green Bell Peppers until softened
- Add minced Garlic and cook for 60 seconds
- Bloom the spices: stir in Chili Powder, Ground Cumin, Smoked Paprika, and Dried Oregano
- Transfer everything to a slow cooker and add Diced Tomatoes, Tomato Paste, rinsed Kidney Beans, Black Beans, Honey, and Broth. Stir to combine
- Cover and cook on Low for 4 to 6 hours or on High for 2 to 3 hours
- Adjust seasoning before serving and garnish with fresh cilantro and avocado
