Description

Spanish Garlic Potato Soup is a warming, creamy soup made from potatoes, garlic, and smoked paprika, perfect for any occasion.


Ingredients

4 tablespoons Extra Virgin Olive Oil
8 to 10 cloves Fresh Garlic, thinly sliced
2 pounds Yukon Gold Potatoes, peeled and chopped
1.5 teaspoons Smoked Paprika
6 cups Vegetable or Chicken Broth
Sea Salt and Cracked Black Pepper, to taste
Fresh Parsley, chopped
Optional: 1 Poached Egg per perso


Instructions

  1. Heat the olive oil in a large pot over medium-low heat, add the sliced garlic and cook until golden brow
  2. Stir in the smoked paprika and cook for about 30 seconds
  3. Add the chopped potatoes, toss to coat in the oil and spices, and sauté for 3-4 minutes
  4. Pour in the broth, bring to a gentle boil, reduce to low and simmer for 20-25 minutes until potatoes are tender
  5. Smash some potatoes for a creamier texture or use an immersion blender for a few pulses
  6. Season with salt and pepper, and optionally poach eggs in the simmering soup for 3-4 minutes
  7. Serve hot, garnished with parsley and a drizzle of olive oil

Using high-quality broth enhances the soup’s flavor.
