Ingredients
2.5 pounds Grass-fed Beef Chuck Roast
2 tablespoons Olive Oil
1 large Yellow Onio
5 cloves Garlic
1 inch Fresh Ginger Root
3 medium Carrots
2 Celery Stalks
1 can (28 ounces) Diced Tomatoes
8 cups Beef Broth
3 tablespoons Chili Paste
2 tablespoons Soy Sauce
1 tablespoon Maple Syrup
1 tablespoon Apple Cider Vinegar
5 ounces Fresh Spinach
0.5 cup Fresh Cilantro
Salt and Black Pepper to taste
Instructions
- Sear the beef cubes dry with paper towels and season with salt and pepper. Heat olive oil in a pot over medium-high heat and sear the beef until browned, then remove
- Add more olive oil and sauté onions, carrots, and celery until soft. Stir in garlic and ginger, cooking until fragrant
- Deglaze the pot with a splash of beef broth. Stir in diced tomatoes, chili paste, soy sauce, maple syrup, and vinegar
- Return the beef to the pot and add remaining beef broth. Bring to a gentle boil, then simmer for 1.5 to 2 hours until the beef is tender
- Stir in fresh spinach and cook until wilted. Adjust seasoning to taste before serving
Notes
For a more mild soup, reduce the amount of chili paste.
This soup tastes even better the next day as the flavors meld.
