2.5 pounds Grass-fed Beef Chuck Roast
2 tablespoons Olive Oil
1 large Yellow Onio
5 cloves Garlic
1 inch Fresh Ginger Root
3 medium Carrots
2 Celery Stalks
1 can (28 ounces) Diced Tomatoes
8 cups Beef Broth
3 tablespoons Chili Paste
2 tablespoons Soy Sauce
1 tablespoon Maple Syrup
1 tablespoon Apple Cider Vinegar
5 ounces Fresh Spinach
0.5 cup Fresh Cilantro
Salt and Black Pepper to taste


Instructions

  1. Sear the beef cubes dry with paper towels and season with salt and pepper. Heat olive oil in a pot over medium-high heat and sear the beef until browned, then remove
  2. Add more olive oil and sauté onions, carrots, and celery until soft. Stir in garlic and ginger, cooking until fragrant
  3. Deglaze the pot with a splash of beef broth. Stir in diced tomatoes, chili paste, soy sauce, maple syrup, and vinegar
  4. Return the beef to the pot and add remaining beef broth. Bring to a gentle boil, then simmer for 1.5 to 2 hours until the beef is tender
  5. Stir in fresh spinach and cook until wilted. Adjust seasoning to taste before serving

Notes

For a more mild soup, reduce the amount of chili paste.

This soup tastes even better the next day as the flavors meld.
