1 Head of Butter Lettuce or Romaine Hearts
2 tbsp Avocado Oil or Extra Virgin Olive Oil
1 tbsp Fresh Ginger, grated
2 cloves Garlic, minced
3 Scallions, sliced (white and green parts separated)
3 tbsp Coconut Aminos
1 tbsp Rice Vinegar
1 tbsp Raw Honey
1–2 tsp Sriracha or Red Chili Flakes
1 cup Water Chestnuts, diced
1/4 cup Crushed Peanuts
Instructions
- Prepare the Lettuce: Wash and dry the lettuce leaves thoroughly and set aside
- Whisk the Glaze: Combine coconut aminos, rice vinegar, raw honey, and chili sauce in a bowl and whisk until smooth
- Sear the Turkey: Heat oil in a skillet over medium-high heat, add turkey, and cook until golden brow
- Infuse the Aromatics: Push turkey to the side, add garlic, ginger, and white scallions, and sauté for 60 seconds
- Add the Crunch: Fold in the water chestnuts
- Glaze and Caramelize: Pour the sauce over the turkey mixture and stir until the sauce thickens
