Ingredients

2 Large Sweet Potatoes
2 Tablespoons Avocado Oil
1 Teaspoon Smoked Paprika
1 Teaspoon Chili Powder
1/2 Teaspoon Ground Cumi
Sea Salt to taste
8 Small Corn Tortillas
1 Tablespoon Lime Juice
1 Teaspoon Raw Honey (Optional)


Instructions

  1. Preheat your oven to 400°F (200°C)
  2. Peel and dice the sweet potatoes into uniform 1/2-inch cubes
  3. Place the cubes on a large baking sheet. Drizzle with Avocado Oil and sprinkle the smoked paprika, chili powder, cumin, and salt
  4. Toss the potatoes directly on the pan with your hands
  5. Spread the potatoes in a single layer
  6. Roast for 25-30 minutes, tossing halfway through
  7. While the potatoes roast, warm your corn tortillas in a dry skillet for 30 seconds per side
  8. Assemble the tacos by spooning the roasted potatoes into the tortillas
  9. Squeeze fresh lime juice over the top
