2 Tablespoons Avocado Oil
1 Teaspoon Smoked Paprika
1 Teaspoon Chili Powder
1/2 Teaspoon Ground Cumi
Sea Salt to taste
8 Small Corn Tortillas
1 Tablespoon Lime Juice
1 Teaspoon Raw Honey (Optional)
Instructions
- Preheat your oven to 400°F (200°C)
- Peel and dice the sweet potatoes into uniform 1/2-inch cubes
- Place the cubes on a large baking sheet. Drizzle with Avocado Oil and sprinkle the smoked paprika, chili powder, cumin, and salt
- Toss the potatoes directly on the pan with your hands
- Spread the potatoes in a single layer
- Roast for 25-30 minutes, tossing halfway through
- While the potatoes roast, warm your corn tortillas in a dry skillet for 30 seconds per side
- Assemble the tacos by spooning the roasted potatoes into the tortillas
- Squeeze fresh lime juice over the top
