Ingredients
3 cups Organic Fresh Spinach
5 large Pasture-Raised Eggs
1.5 cups Low-Fat or Whole Cottage Cheese
1 medium Yellow Onion, diced
3 Garlic Cloves, minced
1 tablespoon Olive Oil
2 tablespoons Almond Flour
Sea Salt and Black Pepper, to taste
1 pinch Nutmeg
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a glass pie dish with Olive Oil
- Heat Olive Oil in a skillet over medium heat, add the diced onion, and sauté until translucent. Add minced garlic and cook for an additional minute
- Stir in the fresh spinach and sauté until wilted, then squeeze out excess moisture
- In a bowl, whisk the eggs, then stir in the cottage cheese, sea salt, black pepper, and nutmeg
- Fold in the sautéed vegetable mixture ensuring even distributio
- Pour the mixture into the prepared pie dish and bake for 35 to 40 minutes until the center is set
- Let it cool for 10 minutes before slicing
Notes
For a crustless version, this recipe is naturally low-carb without losing flavor.
If the quiche browns too quickly, cover it loosely with parchment paper.
