Description

A light and refreshing Spring Mix Salad with Berries that combines crunchy greens and sweet fruit, topped with a homemade vinaigrette.


Ingredients

5 cups Spring Mix Greens
1 cup Fresh Strawberries, sliced
1 cup Fresh Blueberries
1 cup Fresh Raspberries
1/2 cup Raw Pecans or Walnuts
1/2 cup Goat Cheese or Feta, crumbled
1/4 cup Extra Virgin Olive Oil
2 tablespoons Apple Cider Vinegar or Balsamic Vinegar
1 tablespoon Raw Honey or Maple Syrup
Sea Salt, to taste
Black Pepper, to taste


Instructions

  1. Prepare the greens by placing the spring mix into a large serving bowl, ensuring they are dry and crisp
  2. Wash the strawberries, blueberries, and raspberries gently. Pat them dry. Slice the strawberries into thin pieces and keep the smaller berries whole
  3. In a small jar or bowl, combine the olive oil, vinegar, honey, salt, and pepper. Whisk until emulsified
  4. Optional: Lightly toast the pecans in a dry pan over medium heat until fragrant
  5. Layer the berries and nuts over the greens, then crumble the goat cheese or feta on top
  6. Just before serving, drizzle the dressing over the salad and toss gently to combine
  7. Serve immediately on chilled plates
