A light and refreshing Spring Mix Salad with Berries that combines crunchy greens and sweet fruit, topped with a homemade vinaigrette.
Ingredients
5 cups Spring Mix Greens
1 cup Fresh Strawberries, sliced
1 cup Fresh Blueberries
1 cup Fresh Raspberries
1/2 cup Raw Pecans or Walnuts
1/2 cup Goat Cheese or Feta, crumbled
1/4 cup Extra Virgin Olive Oil
2 tablespoons Apple Cider Vinegar or Balsamic Vinegar
1 tablespoon Raw Honey or Maple Syrup
Sea Salt, to taste
Black Pepper, to taste
Instructions
- Prepare the greens by placing the spring mix into a large serving bowl, ensuring they are dry and crisp
- Wash the strawberries, blueberries, and raspberries gently. Pat them dry. Slice the strawberries into thin pieces and keep the smaller berries whole
- In a small jar or bowl, combine the olive oil, vinegar, honey, salt, and pepper. Whisk until emulsified
- Optional: Lightly toast the pecans in a dry pan over medium heat until fragrant
- Layer the berries and nuts over the greens, then crumble the goat cheese or feta on top
- Just before serving, drizzle the dressing over the salad and toss gently to combine
- Serve immediately on chilled plates
