Ingredients
2 large bunches Fresh Curly or Lacinato Kale
2 tablespoons Extra Virgin Olive Oil
4 cloves Fresh Garlic, minced
1/2 large Lemon, juice
1/2 teaspoon Red Pepper Flakes
Sea Salt & Black Pepper to taste
1/4 cup Vegetable Broth or Water
Instructions
- Wash the kale thoroughly and remove the tough center ribs. Tear or chop the leaves into bite-sized pieces
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sauté until garlic is fragrant
- Add kale in batches to the skillet, tossing to coat the leaves with oil and garlic
- Pour in the vegetable broth or water, cover with a lid, and steam for 3 to 5 minutes until the kale is bright green and tender
- Remove the lid, check for excess liquid, then squeeze lemon juice over the kale and season with salt and pepper before serving
Notes
For a smoky flavor, add smoked paprika during steaming.
If you find kale too bitter, massage the leaves with olive oil and salt before cooking.
