1 cup Cassava Flour
3 tablespoons Avocado Oil

Instructions
- Peel and cube the Yukon Gold potatoes. Steam them until fork-tender, then mash until smooth
- In a mixing bowl, whisk together Avocado Oil, Maple Syrup, and mashed potatoes until silky
- Sift in Cassava Flour, Baking Powder, Sea Salt, and Garlic Powder, and fold until combined
- Gently fold in the minced Fresh Rosemary
- Line muffin tins with oil and fill molds with batter
- Steam for 15-20 minutes until muffins feel springy and a toothpick comes out clea
- Let muffins cool for 5 minutes before removing from molds
