Description

Ingredients

2 cups Mashed Yukon Gold Potatoes
1 cup Cassava Flour
3 tablespoons Avocado Oil
1 tablespoon Maple Syrup
1 teaspoon Baking Powder
1/2 teaspoon Sea Salt
1 tablespoon Minced Fresh Rosemary
1/2 teaspoon Garlic Powder


Instructions

  1. Peel and cube the Yukon Gold potatoes. Steam them until fork-tender, then mash until smooth
  2. In a mixing bowl, whisk together Avocado Oil, Maple Syrup, and mashed potatoes until silky
  3. Sift in Cassava Flour, Baking Powder, Sea Salt, and Garlic Powder, and fold until combined
  4. Gently fold in the minced Fresh Rosemary
  5. Line muffin tins with oil and fill molds with batter
  6. Steam for 15-20 minutes until muffins feel springy and a toothpick comes out clea
  7. Let muffins cool for 5 minutes before removing from molds

Notes

For a crispier exterior, quickly sear the muffins in a pan with a drop of avocado oil after steaming.
