Description

This Sticky Tofu Roasted recipe delivers an unparalleled symphony of textures and flavors – a perfectly caramelized exterior giving way to a tender, chewy interior, all enveloped in a deeply savory, subtly sweet glaze.


Ingredients

1 block (14-16 oz) Extra-Firm Tofu
¼ cup Tamari (or Coconut Aminos)
3 tablespoons Maple Syrup (Grade A Dark Robust)
2 tablespoons Rice Vinegar
1 tablespoon Sesame Oil (toasted)
1 tablespoon Fresh Ginger, grated
23 cloves Garlic, minced
1 tablespoon Arrowroot Starch (or Cornstarch)
½ teaspoon Red Pepper Flakes (or to taste)
12 tablespoons Olive Oil (or Avocado Oil)
Sesame Seeds, for garnish
Green Onions, for garnish, sliced


Instructions

  1. Press the Tofu: Slice tofu into 1-inch thick slabs, place between paper towels, weigh down, and press for 30 minutes to 2 hours
  2. Prepare the Marinade/Glaze: Whisk together tamari, maple syrup, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes
  3. Cut & Marinate: Cube the pressed tofu and marinate in half of the sauce for 15-30 minutes
  4. Preheat & Prepare Baking Sheet: Preheat oven to 400°F (200°C) and line a baking sheet
  5. Roast the Tofu: Arrange marinated tofu on the baking sheet and drizzle with oil. Roast for 20-25 minutes, flipping halfway
  6. Prepare the Sticky Glaze: Mix arrowroot starch with water, combine with reserved sauce
  7. Glaze & Finish Roasting: Pour glaze over tofu, toss to coat, and roast for an additional 10-15 minutes until sticky
  8. Garnish & Serve: Remove from oven, garnish with sesame seeds and green onions, and serve

Notes

Pressing the tofu is critical for achieving the right texture.

Marinate for a longer period if time permits for deeper flavor.
