Description
These Sugar-Free Strawberry Lemonade Popsicles deliver a sharp, refreshing tartness balanced by natural sweetness. Quick to prepare and made with clean ingredients, they offer a healthy and hydrating treat perfect for hot summer days.
Ingredients
2 cups Fresh Strawberries
1/2 cup Fresh Lemon Juice
1 cup Water (Filtered)
3–4 tablespoons Monk Fruit Sweetener or Raw Honey
1 tablespoon Lemon Zest
Instructions
- Wash the strawberries thoroughly and remove the green hulls. If using lemon zest, zest the lemon before juicing
- Place strawberries, fresh lemon juice, water, lemon zest, and sweetener into a high-speed blender. Process until smooth
- Taste the mixture and adjust sweetness if necessary. Add more monk fruit or honey if the strawberries are tart
- Pour the mixture into popsicle molds, leaving about a quarter-inch space at the top
- Insert sticks into the molds. If no lid, freeze for 45 minutes before inserting the sticks
- Freeze for at least 4 to 6 hours, preferably overnight
- Run the outside of the mold under warm water for 10 seconds and gently pull the sticks to release the popsicles
Notes
Use freshly squeezed lemon juice for the best flavor.
For a different texture, replace water with full-fat coconut milk.
Store popsicles wrapped in parchment paper to prevent freezer burn.
