1 medium Red Bell Pepper
1/2 small Red Onio
2 tablespoons Avocado Oil
3 cloves Garlic
1 teaspoon Smoked Paprika
1 teaspoon Ground Cumi
1/2 teaspoon Chili Powder
1 whole Fresh Lime
1/4 cup Fresh Cilantro
Sea Salt & Black Pepper to taste


Instructions

  1. Prep the vegetables by peeling and dicing the sweet potatoes into uniform 1/2-inch cubes
  2. Heat a large cast-iron skillet over medium-high heat and add the avocado oil until it shimmers
  3. Add the diced sweet potatoes to the skillet in a single layer and cook undisturbed for about 5-7 minutes until caramelized
  4. Stir in the diced red onion and bell pepper and sauté for another 5 minutes until softened
  5. Add the minced garlic, smoked paprika, cumin, chili powder, salt, and pepper, stirring for 1 minute
  6. Fold in the rinsed black beans and cook for an additional 3-4 minutes until heated through
  7. Remove from heat, squeeze lime juice over the hash, and sprinkle with chopped cilantro before serving
