2 large Sweet Potatoes
1 can (15 oz) Black Beans

1/2 small Red Onio
2 tablespoons Avocado Oil
3 cloves Garlic
1 teaspoon Smoked Paprika
1 teaspoon Ground Cumi
1/2 teaspoon Chili Powder
1 whole Fresh Lime
1/4 cup Fresh Cilantro
Sea Salt & Black Pepper to taste
Instructions
- Prep the vegetables by peeling and dicing the sweet potatoes into uniform 1/2-inch cubes
- Heat a large cast-iron skillet over medium-high heat and add the avocado oil until it shimmers
