Ingredients
2 Tablespoons Extra Virgin Olive Oil
1 Large Yellow Onion, finely diced
4 Cloves Fresh Garlic, minced
28 Ounces San Marzano Tomatoes, whole peeled
2 Cups Vegetable Broth, low-sodium
1 Cup Fresh Basil Leaves, packed tightly
1 Tablespoon Maple Syrup or Honey
Sea Salt and Black Pepper, to taste
1/2 Cup Coconut Milk, full fat (optional)
Instructions
- Sauté the Aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onions, sautéing until translucent and slightly golden, about 5-7 minutes. Stir in the minced garlic, cooking for another minute until fragrant
- Deglaze and Combine: Add the San Marzano tomatoes (with juices) to the pot, breaking them into smaller chunks. Pour in the vegetable broth and maple syrup, stirring to combine
- Simmer to Perfection: Bring the soup to a gentle boil, then reduce heat and let it simmer uncovered for about 20 minutes to meld the flavors
- Add the Freshness: Remove from heat and stir in the fresh basil leaves
- Blend Until Smooth: Use an immersion blender to blend the soup to your desired consistency
- Final Touches: Stir in coconut milk if desired, and season with salt and pepper. Serve immediately while hot
