Ingredients
1.5 lbs Organic Chicken Breast
2 tbsp Extra Virgin Olive Oil
1 large Yellow Onio
4–6 cloves Fresh Garlic
1 cup Carrots
1 cup Celery
1/2 cup Sun-Dried Tomatoes
1 can (15 oz) Cannellini Beans
1 large bunch Lacinato Kale
6 cups Chicken Bone Broth
1 tbsp Fresh Rosemary
1 tbsp Fresh Thyme
1/2 cup Full-Fat Coconut Milk
1 tbsp Fresh Lemon Juice
Instructions
- Heat the Extra Virgin Olive Oil in a large Dutch oven over medium-high heat. Season chicken with sea salt and black pepper, and sear until golden-brown. Remove chicken and set aside
- In the same pot, add diced onions, carrots, and celery. Sauté until onions are translucent
- Add minced garlic, chopped rosemary, and thyme. Stir for one minute
- Pour in chicken bone broth and add sun-dried tomatoes. Slice seared chicken and return to pot. Bring to a gentle boil, then reduce heat and simmer for 15 to 20 minutes
- Stir in rinsed cannellini beans and coconut milk until broth turns opaque and creamy
- Add chopped kale to the pot and wilt for 3 to 5 minutes
- Turn off heat and stir in fresh lemon juice. Adjust seasoning with sea salt if needed
Notes
For a vegan version, replace chicken with extra mushrooms and use vegetable broth.
Store leftovers in airtight containers for up to 4 days.
