Ingredients

1.5 lbs Organic Chicken Breast
2 tbsp Extra Virgin Olive Oil
1 large Yellow Onio
46 cloves Fresh Garlic
1 cup Carrots
1 cup Celery
1/2 cup Sun-Dried Tomatoes
1 can (15 oz) Cannellini Beans
1 large bunch Lacinato Kale
6 cups Chicken Bone Broth
1 tbsp Fresh Rosemary
1 tbsp Fresh Thyme
1/2 cup Full-Fat Coconut Milk
1 tbsp Fresh Lemon Juice


Instructions

  1. Heat the Extra Virgin Olive Oil in a large Dutch oven over medium-high heat. Season chicken with sea salt and black pepper, and sear until golden-brown. Remove chicken and set aside
  2. In the same pot, add diced onions, carrots, and celery. Sauté until onions are translucent
  3. Add minced garlic, chopped rosemary, and thyme. Stir for one minute
  4. Pour in chicken bone broth and add sun-dried tomatoes. Slice seared chicken and return to pot. Bring to a gentle boil, then reduce heat and simmer for 15 to 20 minutes
  5. Stir in rinsed cannellini beans and coconut milk until broth turns opaque and creamy
  6. Add chopped kale to the pot and wilt for 3 to 5 minutes
  7. Turn off heat and stir in fresh lemon juice. Adjust seasoning with sea salt if needed

Notes

For a vegan version, replace chicken with extra mushrooms and use vegetable broth.

Store leftovers in airtight containers for up to 4 days.
