Description

Ingredients

1.5 cups Dried Brown or Green Lentils
2 tablespoons Extra Virgin Olive Oil
1 large Yellow Onio
3 medium Carrots
2 stalks Celery Stalks
4 large Garlic Cloves
6 cups Vegetable Broth
1 can (14.5 oz) Crushed Tomatoes
2 cups Fresh Kale or Spinach
1 teaspoon Ground Cumi
1 teaspoon Smoked Paprika
1/2 teaspoon Turmeric Powder
1 tablespoon Lemon Juice
Sea Salt and Black Pepper to Taste


Instructions

  1. Heat the Extra Virgin Olive Oil in a large pot over medium heat. Add the diced onion, carrots, and celery and sauté for 5-7 minutes until the onions are translucent
  2. Stir in the minced garlic, ground cumin, smoked paprika, and turmeric. Toast for about 60 seconds
  3. Pour in the rinsed lentils, crushed tomatoes, and vegetable broth. Stir to combine and bring to a gentle boil
  4. Reduce the heat to low, cover partially, and let simmer for 30 to 40 minutes until the lentils are tender
  5. Remove the lid and stir in the chopped kale or spinach until wilted
  6. Turn off the heat and stir in the fresh lemon juice. Season with sea salt and black pepper to taste

Notes

Rinse lentils thoroughly before cooking to ensure a clean flavor.

If the stew is too thick, add a splash of broth or water to reach desired consistency.

For a creamier texture, consider blending a portion of the stew before serving.
