2 cups Baby Spinach or chopped Kale

1 can (15 oz) Red Kidney Beans, rinsed
1 can (15 oz) Cannellini Beans, rinsed
1 cup Ditalini or Small Shell Pasta (ensure it is vegan)
1 tsp Dried Oregano
1 tsp Dried Basil
1/2 tsp Dried Thyme
Salt and Black Pepper to taste
Fresh Parsley for garnish


Instructions

  1. Sauté the Aromatics: Place a large Dutch oven or heavy-bottomed pot over medium heat. Pour in your Olive Oil and wait for it to shimmer. Add the diced Onion, Carrots, and Celery. Sauté for about 6 to 8 minutes until the onions are translucent
  2. Build the Flavor Depth: Stir in the minced Garlic and Tomato Paste. Cook for another 2 minutes, stirring constantly
  3. Add Herbs and Spices: Sprinkle in the Dried Oregano, Basil, and Thyme. Toast the herbs for 30 seconds in the oil
  4. The Liquid Foundation: Pour in the Crushed Tomatoes and Vegetable Broth. Bring the mixture to a gentle boil
