Ingredients

1/2 cup Raw or Roasted Pistachios
1 cup Full-Fat Coconut Milk
1/2 cup Unsweetened Almond or Oat Milk
1/3 cup Maple Syrup or Monk Fruit
2 tablespoons Pistachio Butter
1 teaspoon Vanilla Bean Paste
1/4 teaspoon Sea Salt
Instructions
- In a high-speed blender, combine the coconut milk, almond milk, pistachio butter, maple syrup, vanilla bean paste, and sea salt. Blend on high for 60 seconds until smooth
- Add the pistachios to the blender and pulse briefly to retain some fragments
- Pour the mixture into the Ninja Creami pint container and freeze for 24 hours
- After freezing, process the pint using the Ninja Creami machine
- If the ice cream is crumbly after the first spin, add a tablespoon of almond milk and re-spi
- For mix-ins, create a hole in the ice cream and add chopped pistachios before using the Mix-In functio
- Serve immediately for best texture
Notes
Soak pistachios for two hours for a smoother base.
Toast raw pistachios for deeper flavor.
Adjust sweetener to taste.
