Ingredients
4 large Portobello mushroom caps
4 Whole-grain or Gluten-free buns
1/4 cup Extra Virgin Olive Oil
2 tablespoons Balsamic vinegar
2 cloves minced Garlic
1 tablespoon Maple Syrup
1 teaspoon dried Oregano
1 ripe Avocado, sliced
1 large Heirloom tomato, sliced
1/2 cup Fresh sprouts or Arugula
1 small Red onion, thinly sliced
2 tablespoons Greek yogurt or Vegan mayo
1 teaspoon Dijon mustard
a pinch of Smoked paprika
Instructions
- Gently wipe the portobello caps with a damp paper towel and scrape out the gills
- In a small bowl, whisk together Extra Virgin Olive Oil, balsamic vinegar, minced garlic, Maple Syrup, and oregano until emulsified
- Place mushroom caps in a shallow dish or bag, pour marinade over, and let sit for 15-20 minutes
- Preheat the grill to medium-high heat and brush with Avocado Oil
- Grill the caps for 4-5 minutes per side until they have grill marks and are tender
- Toast the buns lightly on the grill
- Spread sauce on the bottom bun, layer with arugula/sprouts, add grilled mushroom, then top with tomato, onion, and avocado. Close the burger and serve immediately
Notes
Do not wash mushrooms under running water; clean with a cloth to maintain texture.
Do not over-marinate mushrooms to prevent sogginess.
